Gluten Free Cheddar Crackers

As promised, here are the completed cheddar cheese crackers from The Gluten Free Fix. I was unsure the batter was going to rise so I did not roll them thin enough. Next time, I will make sure they have more of a "Cheez-It" texture and bite. My daughter, Halle pictured here, loved them! She took them to school for lunch and made a "Lunchable" out of them topped with ham and cheese. I was worried there wouldn't be enough for her lunch because she kept coming down stairs after her bath to sneak a few.

It surprised me that so few ingredients are needed to create good tasting food. The ingredients are whole and healthy foods that are not processed or enriched. I plan to make more dishes with these types of ingredients and will post my success and failures along the way.
